Every year on January 1st I set my yearly resolutions, but I also decided to start finding one way to challenge myself, just to see if I can do it. Last year I did no eating french fries for the entire year (which was a serious issue for my drunk self who NEEDS poutine). This year, I decided to do NO MEAT. For me it isn’t very difficult except when I go to a pub and REALLY want some hot wings. So here is my substitute for chicken wings, that aren’t only vegetarian, they are VEGAN too!
- 1 cup cooked quinoa
- 1 tbsp flaxseed meal
- 2.5 tbsp watter
- 3 tbsp (give or take) Frank’s Red Hot Buffalo Wing Sauce
- 1 tbsp Daiya Cream Cheese Style Spread
- 1 shredded carrot
- salt + pepper to taste
The first thing you need to do is get your egg substitute ready. I used flaxseed meal in place of an egg to bind my quinoa bites together.
Combine flaxseed meal, and water in a bowl. Let sit for at least 5 minutes. It will become the texture of raw egg whites.
Next, you just combine all ingredients together (including your flaxseed meal, egg replacement) in a medium sized bowl. QUICK and EASY!
Place into lined muffin tin (I like to use re-useable silicone muffin cups like these… Silicone Baking Cup Moulds ).
Bake at 400°C for 30-40 minutes.
Remove from oven, let cool, & ENJOY!
